Katsuobushi is a staple of Japanese cuisine and is indispensable for making dashi (broth), but also perfect as a seasoning over dishes such as okonomiyaki, takoyaki, ramen or rice dishes. By scraping it yourself, you enjoy a more intense flavor and maximum freshness.
This arahobushi variety has been dried and smoked over beech, oak and bay wood, creating a rich, smoky umami flavor with a slightly robust character.
Arahonbushi (荒本節) is the first, traditional dried and smoked version of katsuobushi. Ara = raw/coarse, honbushi = “real” katsuobushi (bonito that has been smoked and dried). It has a stronger, smokier and more robust flavor and is usually used for dashi and everyday cooking
Tokudai (特大) is an ‘’extra large size.”' Toku (特) = special / extra, dai (大) = large.
Use
Slice thinly with a special katsuobushi slicer (kezuriki) or a very sharp knife (be very careful). Use immediately for the best taste experience.
