Description

This dashi soy sauce is made with transparent soy sauce and flavored with bonito and kombu, which impart a rich, savory umami flavor. Because the soy sauce is transparent, the colors of the ingredients are optimally preserved. Additional bonito has been added to the sauce, which has not been filtered (you can see it in the sauce), making the flavor even more potent. As a result, the smokiness of the bonito comes out at its best.

Application

This sauce can be used for a wide range of dishes and provides a flavorful and aromatic finish. Recommended for example for rice with egg (tamago kake gohan) and ohitashi (cooked vegetables), but also suitable as a dip (slightly diluted) or in dressings and marinades. Also delicious mixed with Japanese mayonnaise. In addition, it gives soups just that little something extra.

Producer

Fundodai is a Japanese family business with a rich history dating back to the 17th century. What began as a combination sake brewery and money exchange in Kumamoto grew into a producer of soy sauce in 1869. Since then, the company has evolved into a versatile maker of traditional Japanese flavorings, including soy sauce, miso and other condiments.

Transparent soy sauce

Transparent (clear) soy sauce is a soy sauce without the usual dark color. The new generation of producer Fundodai has developed this transparent soy sauce using traditional brewing methods and of excellent quality, with a strong umami flavor.

Transparent soy sauce has the advantage of enriching your food with the delicious aroma and taste of soy sauce as you are used to, without discoloring your dish. This makes other ingredients stand out better on your plate. In addition to the standard transparent soy sauce, Fundodai also has a range of products that incorporate it. Even in these, the additional ingredients come out nicely, such as the pieces of yuzu peel in their yuzu ponzu and the bonito flakes in their dashi soy sauce. Transparent soy sauce creates a new culinary experience.

Clear soy sauce is made by using a solid raw soy sauce, treating it with unique technology to make it transparent, and then refining it into a flavorful soy sauce. Of the approximately 1,100 soy sauce producers in Japan, fewer than 200 are estimated to make raw soy sauce. For example, in Kumamoto Prefecture, where Fundodai is located, only 3 out of 45 companies produce raw soy sauce, making them one of the most unique producers.

Save Dark, cool and dry. After opening, keep tightly closed in the refrigerator and consume as soon as possible. Crystals may form due to the ingredients (amino acids); this does not affect the quality.
