Description
Tsuyu or Mentsuyu is a concentrated, multipurpose Japanese soup base. Diluted, the hearty base can be used as a dipping sauce for deep-fried dishes such as tempura and cold noodle dishes such as somen noodles or with cold soba noodles, or as a base for hot noodle soups such as ramen or udon noodles.
This Tsuyu consists of a base of soy sauce, with Dashi (dried bonito, mackerel and kombu), sugar, mirin and salt. This makes this Tsuyu pure with no unnecessary additives. The combination of soy sauce and dashi creates a deep umami flavor.
One of the advantages of Tsuyu at home is that you can determine the flavor intensity of the broth yourself. As a starting point, consider 3 parts water to 1 part Tsuyu.
Concentrated Tsuyu sauce can also be used as a substitute for standard soy sauce when seasoning stews, hot pot dishes (nabemono) and dips.
If you use Tsuyu as a dipping sauce for dishes like zaru soba, you can add additional ingredients and flavorings, such as sliced spring onions, wasabi and grated ginger.
You can store Tsuyu noodle broth for up to a month in the refrigerator in a sealed container.
