Description
Young fresh sake, aged briefly in a cedar barrel. The brewery is located in Yoshino, the mountain village known as the best producer of cedar barrels. In the pre-modern period, top-quality Yoshino cedar barrels were developed to transport sake by ship from the production centers of western Japan to the consumption center of Edo (now Tokyo). The attractive cedar aroma is perfectly balanced with the fresh and full-bodied qualities of this young and pure sake.
Brewery
Miyoshino Jōzō is a small-scale family brewery, which was restarted at its current location in 1912. Currently the brewery is a one-man operation, run by young brewer Hashimoto Teruaki, which allows him to do as he pleases. This has resulted in several small experiments, which has brought this small brewery into the spotlight among sake lovers. Almost without exception, Hanatomoe sake brands are pure, unpasteurized, unfiltered and undiluted, and most are made with natural yeast. The brewery is located in the village of Yoshino, the most famous place to view cherry blossoms in Japan, but also known for the Yoshino cedar wood used by most breweries to make this type of sake.
