Origin
The wasabi rhizome is the thick, firm part of the stem - similar to a root or stem - and the most valuable part of the wasabi plant (wasabia japonica). Naturally, the wasabi plant grows in swampy areas in Japan. In our own greenhouses in the Netherlands grows the wasabi for 18 to 24 months under carefully controlled conditions. When the rhizome is large enough, it is harvested by hand. The weight per piece varies between 50 and 110 grams. For 4 people sushi, we recommend a rhizome of about 60 grams; with our 4-6 person variety, you'll always be fine.
Flavor Profile
Freshly grated wasabi has a delicate spiciness (a sharp kick) that quickly gives way to a mild, sweet and slightly floral aftertaste. The flavor arises because the cells are broken at the microscopic level during grating and react with oxygen. Unlike imitation wasabi - often made from horseradish, dyes, sugar and starch - our wasabi 100% is pure and genuine, with a more complex, subtle and aromatic flavor. Wasabi has a characteristic “wasabi taste’’ in addition to its familiar sharpness.
Application
Just before use, grate the rhizome with a suitable wasabi grater (a standard kitchen grater is unsuitable for this purpose) to obtain a creamy, fine paste with the right flavor. Serve immediately: the unique spiciness and flavors are optimal in the first 15 minutes after grating.
Perfect (and originally served) with sushi and sashimi, but also surprising in dressings, butters, sauces, ceviches, sorbets etc. or as a fresh counterpart to meat and fish dishes. In fatty dishes, the sharpness remains the longest, while the characteristic ‘’wasabi taste’’ gives extra depth. (Please note in recipes that a 60-gram rhizome does not give 60 grams of wasabi paste, but slightly less).
Save
The wasabi comes in a plastic bag. Store in the refrigerator and use preferably within a week. After a week, the outside of the rhizome may turn slightly brown. In that case, cut off the head of the rhizome; the inside can still be used and eaten as usual. We recommend storing the wasabi no longer than 2 weeks.
In our assortment you will also find a wasabi grater and a bamboo brush, to finely grate and remove the fresh rhizome from the grater.

Our fresh products are packed and shipped with the utmost care so that they arrive at your door in optimal condition. In what way, varies by product. If necessary, we use refrigerated packaging with insulating material and cooling elements to keep the temperature stable during transport. This way freshness is maintained even during warmer days. Products are packed securely and safely to prevent damage. Because fresh products have a limited shelf life and are more sensitive, we recommend that they be accepted/picked up immediately at the service point and stored properly immediately after receipt.
