Traditionally fermented, over 20 years aged Junmai sake. Yamahai (traditional fermentation) and koshu (aged): jukusei-style. Smooth and full-bodied with caramel notes. Delicious with meat, but also with soy sauce, miso and spicy dishes. Drink at room temperature or slightly warmed.

Description
Formerly Biden 1999. Now a blend vintages from 1994/2015/2018.
Made from locally grown Yamadanishiki rice, fermented using the traditional yamahai method and aged at room temperature, this vintage Biden a smooth and full-bodied koshu. With caramel notes typical of aged sake.
Recommended at
Meat, as well as soy sauce and miso seasoned and even spicy dishes.
Brewery
Mii no Kotobuki (formerly known as Inoue Gōmei) is a brewery with strong ambition, founded in 1922. Based on local Itoshima Yamadanishiki rice, along with small volume and slow brewing, it produces the Mii no Kotobuki, Biden and Eiden brands, which have built a strong following among sake connoisseurs. Also known for its Mii no Umeshu plum sake, for which this version of Biden is used as a base.
