Description
This particular sanbaizu (三杯酢) rice vinegar is from the label of The Wasabi Company, a family-owned company known for growing and supplying refined Japanese ingredients. In addition to their own cultivation - for example, they were the first in Europe to successfully cultivate wasabi - they import carefully selected quality products directly from Japan. Their passion for taste and craftsmanship has already earned them several prestigious Great Taste Awards, including the highest rating of 3 stars for this sanbaizu.
The vinegar is fermented and aged in more than a century-old cedar barrels, each named after a sumo champion. The use of water from the Kumano Mountains and the manually controlled fermentation give the sanbaizu a unique, authentic signature rarely seen.
Flavor Profile
The vinegar is subtly flavored with dried kelp (kombu 昆布), smoked and dried tuna flakes (bonito or katsuobushi 鰹節), mirin and mushrooms. The result is a complex balance of a hint of sweetness and gentle acidity, with rich umami notes and an inviting aroma. Expert judges (Great Taste Awards) describe it as ‘’so good it could almost pass as a drink’’: fruity with refined fishy and earthy layers.
Application
Perfect for marinating vegetables or as a flavoring in dressings, dips and sauces. For example, delicious in a Japanese tomato onion salad or to give homemade dishes an authentic Japanese twist.
