A sophisticated and spectacular twist on the classic ponzu (with dark soy sauce). This variant contains a transparent soy sauce and pieces of yuzu peel that subtly float in the sauce. This not only makes for a beautiful presentation, but also for added flavor and a light textural experience.
You clearly taste the fresh, citrusy flavor and pleasant sourness of yuzu, perfectly balanced with the savory umami of soy sauce. The sauce is made with juice and zest from locally grown yuzu from Kyushu, the southern island of Japan.
Application
This versatile ponzu has a wide range of uses in the kitchen:
- Delicious with octopus sashimi, such as with onion, bell bell pepper and okra.
- Make a flavorful sweet-and-sour glaze with sake and sugar for chicken or tofu.
- Use as a dressing (with olive oil) over salads, such as with avocado and salmon or a fresh combination of cucumber, crab stick and katsuobushi.
- Ideal as a marinade for rolled appetizers or side dishes, such as grilled (enoki) mushrooms wrapped in pork chops or lettuce.
- Combines surprisingly well with shiso.
Producer
Fundodai is a Japanese family business with a rich history dating back to the 17th century. What began as a combination sake brewery and money exchange in Kumamoto grew into a producer of soy sauce in 1869. Since then, the company has evolved into a versatile maker of traditional Japanese flavorings, including soy sauce, miso and other condiments.

Transparent soy sauce
Transparent (clear) soy sauce is a soy sauce without the usual dark color. The new generation of producer Fundodai has developed this transparent soy sauce using traditional brewing methods and of excellent quality, with a strong umami flavor.
Transparent soy sauce has the advantage of enriching your food with the delicious aroma and taste of soy sauce as you are used to, without discoloring your dish. This makes other ingredients stand out better on your plate. In addition to the standard transparent soy sauce, Fundodai also has a range of products that incorporate it. Even in these, the additional ingredients come out nicely, such as the pieces of yuzu peel in their yuzu ponzu and the bonito flakes in their dashi soy sauce. Transparent soy sauce creates a new culinary experience.
Clear soy sauce is made by using a solid raw soy sauce, treating it with unique technology to make it transparent, and then refining it into a flavorful soy sauce. Of the approximately 1,100 soy sauce producers in Japan, fewer than 200 are estimated to make raw soy sauce. For example, in Kumamoto Prefecture, where Fundodai is located, only 3 out of 45 companies produce raw soy sauce, making them one of the most unique producers.
