Description
A smooth, light and relaxed (yanwari) low in alcohol (12%) sake from the English head brewer who usually makes somewhat heartier sake. This slow brew yamahai, brewed with natural yeast, has a slightly dry taste. Drink this sake preferably warm.

Brewery
Kinoshita Shuzō is a small-scale brewery on the Japan Sea coast of Kyoto Prefecture, founded in 1842. This brewery became famous is bringing in Englishman Philip Harper, who thus became the first foreign master brewer (tōji). Head brewer Harper implemented traditional brewing methods, such as slow-brew methods yamahai and kimoto, and the use of natural yeast. His full-body full-flavor sake is also notable for its relatively high alcohol content; the ‘complete fermentation’ variety even reaches the highest level of 21-22%.
