De nieuwste seizoenseditie van de geliefde Tomasu producten. Éen ding is zeker: in dit potje is veel aandacht, liefde en tijd gestoken; en dat proef je! Naast hun ijzersterke vaste, signature assortiment blijven ze bij Tomasu nieuwsgierig in experimenteren en pakken ze vooral aan wat ze écht leuk vinden; zoals bij deze wilde knoflook release. Zelf zeggen ze hier het volgende over:
‘’Every year wild garlic reminds us that spring has arrived. Early in the spring it pushes its way up through the ground: fresh, fragrant and impossible to ignore. It's only a brief moment, and then it's gone again. We have learned to pay attention and act quickly.
Part of what makes this release special is the origin of the wild garlic. We pick some ourselves, with a little help from Landzicht Biologisch and guidance from Hoekschewaards Landschap, who point us to the best spots. There is something about self-gathering that lingers. Everything after that simply feels more conscious.

Wild garlic has a quality that is hard to describe. It is green, vibrant and a bit wild, but also has a depth that develops over time. We were curious to see what would happen if we let it rest together with our soy sauce, just long enough to find each other. That's exactly what we did. The wild garlic has now been in our vat for a year and has slowly become part of the soy sauce. This year we added a second load of fresh leaves to bring back some freshness. Our way of capturing a slice of spring in a bottle.
Then we sifted it, dried the leaves and mixed it with our soy salt. Thus, two products were created from this experiment: Wild Garlic Soy and Wild Garlic Salt. We didn't plan to make both, but those leaves still had so much to give.
We could make all kinds of recommendations for using both products. But as some of you probably know ... we are not chefs. We prefer to stick to brewing soy sauce. Still, with such a seasonal product, it's obvious to try it with typical spring dishes. But we'd rather not say too much. Things like this are best discovered in your own kitchen, at your own time.
This is a seasonal release, available only briefly, as it should be. But if you miss it this year, chances are it will return next spring. Wild garlic tends to make sure we don't forget it.
