Description

This Sakura rice vinegar is manufactured by Tobaya Suten, a renowned Japanese producer from Fukui Prefecture (福井県) with more than 300 years of experience in making high-quality rice vinegar. In April, the cherry blossoms (sakura - 桜) hand-picked, exclusively in Japan, and then soaked in the vinegar for as much as six months. After this aging, the vinegar is carefully filtered and the flowers are pressed to release all the aromas. For the base, Tobaya Suten uses four times as much rice as usual, making for a particularly rich and refined flavor.

The taste is a perfect balance of soft-sweet, mild acidity and a subtle hint of salt, with the delicate perfume of sakura blossom. These floral notes give dishes an elegant and refined dimension, without being overpowering.

Application
