For this product, a miso was developed in the style of doubanjiang, aiming to create a rich, concentrated umami flavor. This miso is homemade without unnecessary additives and naturally fermented. The freeze-dried doubanjiang miso is a concentrate of rich flavors and aromas: powerful fermentation notes, perfectly balanced chili and salt, with fruity accents. In addition, freeze-drying provides additional convenience.

Doubanjiang

Doubanjiang is a traditional Chinese condiment (paste) that originated in the province of Sichuan (which is known for its spicy flavors). This particular paste is made from fermented broad beans (fava beans), chili peppers and often other ingredients such as soy, salt and flour. The fermentation process - which can take months or even years - creates a rich and complex flavor that is indispensable in regional cuisine.

The paste usually has a deep red to reddish-brown color and a somewhat coarse texture. During traditional preparation, the ingredients are exposed to sunlight for long periods of time and regularly stirred by hand, which contributes to the characteristic flavor development. 

In cooking, doubanjiang is mainly used as a flavor base. It is an essential ingredient in many Sichuan dishes, such as mapo tofu and huoguo (Sichuan hotpot), and often forms the heart of sauces, stir-fries and stews. Briefly frying the paste in oil helps release its deep color and aroma. It can also be used directly to add depth to vegetables, meat or fish.

In terms of flavor, doubanjiang is distinct and versatile. It combines savory, salty and spicy notes with a powerful umami flavor. Depending on the variety, a slight sweetness may also be present. The result is an intense, full-bodied flavor that gives dishes a distinctive depth and complexity.

Application

You can think of this freeze-dried miso-doubanjiang as a kind of cross between broth powder, spice and flavor paste, but more intense and versatile. 

  • As a finishing touch over dishes such as roasted vegetables, fried egg, avocado toast, fries or even popcorn.
  • In stir-fries (add a small amount while sautéing vegetables, rice or noodles).
  • In soups and broths (mix it into a soup or quick broth for extra depth).
  • To season the filling of gyoza and dumplings.
  • As a rub for meat (e.g. chicken-wings) or tofu before frying or grilling for a savory, slightly spicy crust.
  • As an enhancement for over shellfish, tartare, and grilled fish.
  • Through sauces, dressings and marinades (for example, mixed with oil, vinegar or soy sauce).
  • Also delicious in mayonnaise, yogurt or butter for a spicy spread.
  • Work it through dough (e.g., savory cookies, crackers or bread).
  • Or sprinkle it over nuts before toasting them.
