Description
Sudachi is a mutation of the yuzu. Originally from Japan but increasingly from closer, from Spain. They are usually harvested green from September through October, but are also available yellow later in the year. In addition to a sour taste, they sometimes have a spicy almost pepper-like undertone. Both the juice and skin are usable.
Best stored in the refrigerator.
