Poké bowl is an authentic dish from Hawaii. Here it was mainly eaten by Hawaiian fishermen to use up fish leftovers. Poké means cutting in Hawaiian and that has everything to do with the fish, vegetables and sometimes fruit drapped on the rice.
Despite the fact that poké comes from the regional American cuisine of Hawaii, traditional seasonings for poké are strongly influenced by Japanese cuisine in particular. Dressings are often made with soy sauce, shoyu and in this case ponzu.
The dressing is made with fresh ponzu soy sauce. This citrus soy sauce gives a very layered flavor to the dressing. For this poké bowl, get a beautiful piece of fish from you local fish shop, very fresh so that it can be eaten raw.
For the rice
- 250 g sushi rice
- 5 tbsp. Kobara Suzo rice vinegar
- 1 tsp. salt
- 1 tsp. sugar
For the topping
- 150 g radishes
- 3 stalks of spring onion
- 1 mango
- 2 tbsp. sesame seeds
- 2 avocados
- 300 g fresh salmon
For the dressing
- 1 thumb ginger
- 5 tbsp. ponzu shoyu
- 3 tbsp. mayonnaise
Wash the sushi rice until the water, you rinse or wash it with, is clear. Put on a pan with 400 milliliters of water and add the rice. Bring to a boil and then simmer for 10 minutes. Then leave the pan off the heat for 15 minutes with the lid on. Then add the rice to a bowl so that it can cool down a bit.
Mix the vinegar, sugar and salt until the sugar and salt are dissolved. Now pour this over sushi rice, stir with a wooden spoon or spatula through the rice.
Cut the radishes into slices and the spring onions into rings. Peel the mango and remove the pit. Cut the mango into cubes. In the meantime, roast the sesame seeds dry in a frying pan for about 3 to 5 minutes. Cut open the avocado and remove the pit. Cut the avocado into slices. Finally, cut the salmon into cubes.
Peel and grate a thumb of ginger. For the dressing, mix the ponzu with the mayonnaise and the ginger.
Put some sushi rice into a bowl and place the vegetables and fruits on top of the rice. Add the salmon and sprinkle some sesame seeds on top. Finally, pour the dressing over the poké bowl.
