What is Binchotan charcoal?
Binchotan charcoal is made from different types of wood, which are carefully selected and charred at high temperatures in kilns. This process is closely monitored to ensure that the charcoal reaches the right temperature and composition. This produces a charcoal with a high calorific value.
When grilling, the Binchotan provides even and consistent heat, allowing the meat to grill slowly and evenly.
Which Binchotan is the best?
Originally, Binchotan is produced in Japan from oak. This is only extremely expensive and oak grows very slowly. Therefore, alternatives are being sought these days. Binchotan says mainly stands for the process of charring.
You can recognize a good Binchotan by the following characteristics:
- The pieces are not too big
- The pieces are beautiful without small grit
- Burning does not leave too much ash behind
- The pieces do not splatter apart when you complement them on an already burning grill
- They burn hot and long without too much flame formation.
How do you light your Binchotan?
We recommend using our charcoal starter pan or chimney. It is easy to light and takes the hassle out of getting hot coals. Place the pan or chimney on a gas stove or other open fire. It takes about 8-10 minutes for the coals to become red hot. You may have to turn them over once.
Put the hot coals in your grill and cover with additional Binchotan if needed.
Wait until all the Binchotan glows before grilling. This ensures that the grill burns at a consistent temperature.
Another method is to light with a propane/butane gas burner. Fill the grill about half full with Binchotan . Light the burner and move evenly over the Binchotan. Once the Binchotan is burning, add a few more pieces.
If you are lighting Binchotan that has already burned once, you can also use lighting wicks on a piece of kitchen paper soaked in olive or sunflower oil.
When you're done grilling
Binchotan burns for 4-6 hours and can be extinguished and relit 2-3 times. The best way to extinguish your Binchotan is to use a pan with a lid or cast iron pot.
DO NOT put water in a stone grill, as this can crack the grill.
