Description
This ōkarakuchi (literally ‘big dry mouth’) sake from Akishika Shuzō brewery is one of the most dry sake available in Japan. Akishika is a dry sake rich and deep, full of flavor, with a pronounced acidity. This very dry ginjō sake is close to the dry end of the sake range, but does not taste extremely dry because of its high acidity and umami. The deep flavor becomes stronger as the sake ages. Unpasteurized, unfiltered, undiluted. Drink at all temperatures.

Brewery
Akishika Shuzō is one of the few breweries that follow the concept of a wine chateau. Virtually all of the rice used is grown around the brewery by the owner himself and about 20 contracted local farmers. Founded in 1886, it has earned a reputation among connoisseurs under current owner/head brewer Oku Hiroaki as a brewery that makes top-quality sake with a distinctly dry and robust character. The brewery has a huge storage facility for aging, where Oku ages one of the best aged sake. Akishika Shuzō limits itself to making pure sake (junmaishu) without any additives.
