A very elegant yet full-bodied, fruity Junmai Ginjō sake. Unpasteurized. A combination of sweetness and acidity results in a refreshing apple-like aroma and flavor. Unlike most Junmai Ginjō, which offer mainly aroma, Kizan has a very high acidity for a Junmai Ginjō sake and therefore also gives a full body and full flavor. Perfect for a hot summer day!

Kizan is a new high-quality junmai brand introduced in 1997 by the Chikuma Nishiki brewery.

Brewery

The Chikuma Nishiki brewery is located in the center of Nagano Prefecture. This is a perfect location for brewing sake because of its naturally cold location amidst some of Japan's highest mountain ranges. From crystal clear water, crisp cold mountain air and great rice, Nagano has the perfect ingredients for producing great Sake. Chikuma Nishiki has a long brewing history dating back to 1681. The kura (brewery) is built around 4 springs that come from the Chikuma River, providing soft water perfect for brewing sake. They use the famous local rice called Miyama Nishiki for their Sake. This is because of this large, thick uniform grain and its ability to grow evenly in the extremely cold areas of Nagano.
