Exclusive citrus soy sauce, based on long-ripened authentic Igeta dark soy sauce. The added sudachi citrus juice, bonito flakes and konbu seaweed create a refreshing, deep and flavorful soy sauce. Widely used in various Japanese dishes, also great to use in other dishes as an added flavoring.
Brewery
Inoue Honten, Igeta Soy Sauce Brewery located in Nara City was established in 1864, now the 6th generation family brewery. They make soy sauce, miso and other koji (malt) products in their attractive brick building, built in the Taisho era (1912 ~ 1926).
They have a strong focus on the quality of their ingredients and their production process.
They use mostly domestically produced ingredients such as soybeans and wheat. They add no chemical spices, no artificial colors and no preservatives.
Moreover, the 100% is made in-house. For the production process, they take their time. Using the natural yeast that lives in the time-honored building, they take their time to ferment and mature their product along with the Japanese four seasons. This gives a deeper and fuller flavor.
