Sake in its purest form. A rare premodern Junmai sake. The rice is polished only 10% resulting in a deep make, aroma and color. Nama (unpasteurized), genshu (undiluted), kimoto (traditional fermentation), muroka (unfiltered). This sake is 100% natural; nature does its work with a slow-brew kimoto method.

Description
This is the unpasteurized and undiluted (nama genshu) version of Katori 90. Sake as it was made a few centuries ago. True ‘liquid rice’ in taste, color and aroma. All ingredients and elements are premodern: naturally grown rice, natural yeast, slow-brew kimoto, unfiltered. The ‘90’ in the name is the polishing percentage and indicates that the rice is also premodern polished, only 10%. All this results in a very strong flavor and lactobacillus acidity. Drink at all temperatures.
Brewery
Terada Honke brewery was founded around 1675 and has returned to pre-modern and medieval brewing methods. This is Japan's most radical brewery, with no modern machinery and natural and craft are their watchwords. Therefore, Terada Honke is one of the few breweries that does not use cultured yeast or kōji and relies exclusively on their brewery's natural yeast culture and hand-picked kōji. Most of the production is fermented in the slow-brew kimoto method where no lactic acid is added to the starter (moto). The rice used is 100% naturally grown.
