Description
This original Japanese Diatomite Konro Grill is a traditional charcoal grill made of diatomaceous earth, a highly porous and heat-resistant rock perfect for evenly distributing heat.
The Konro grill is mainly used outdoors in Japan. Although it can also be used professionally indoors with proper ventilation on a heat-resistant surface, we do not recommend it at home! Also, when using it outdoors, make sure it has a surface that can withstand heat.
When using a Konro grill, it is important to use high-quality binchotan charcoal, which burns hotter and longer than regular charcoal. Do not stack the charcoal; light it with a burner or in a charcoal chimney. Once the charcoal glows red, you can start grilling, make sure the grill does not get too full.
Use the vents to adjust the heat. The vents allow more oxygen to reach the coals, which in turn means a higher temperature. Binchotan lasts a long time, but if you need to add some, add just enough to keep the bottom of the Konro covered.
When finished, remove the binchotan from the grill into a quenching pot or bucket of water. Do not pour water on the konro grill to extinguish the fire, or the grill will break due to extreme temperature fluctuations. Do not store your konro grill until it has cooled completely.
