    Green yuzu from Spain

Lemon with the aroma of yuzu

The green yuzu is the unripe variety of the yellow ripe yuzu. Yuzu is an aromatic and complex blend of citrus with notes of mandarin, grapefruit and lemon. This popular Japanese citrus is often used in small amounts as a seasoning. With green yuzu, the skin has this fabulous aroma. The juice is very similar to lime with a sent of yuzu. It is therefore slightly more acidic than yellow yuzu.

The juice is a nice seasoning in a cocktail or dressing. A little bit of the grated zest is a nice aromatic addition to sauces, dressings, or creams.

Yuzu is a citrus fruit. Originally from China but grown in Japan in recent decades. It grows on a tree just like oranges and tangerines. The fruit starts out green and ripens yellow / orange in autumn.

Yuzu is very similar in many ways to sudachi another Japanese citrus, a cross between yuzu and tangerine, although unlike sudachi, yuzu eventually ripens to an orange color and there are subtle differences in flavor.

Yuzu is therefore mainly grown in Japan, but since a few decades also in the US and increasingly in Spain. Yet Yuzu remains scarce and has a short shelf life. The harvest season of the ripe Yuzu runs, depending on the weather conditions, from November to January and is very short.

The price of Yuzu is therefore very high compared to other citrus fruits. Fortunately, one fruit gives off a lot of flavor and the skin is also very usable.
