Yuzu juice powder
It's difficult to find yuzu power with just the sweet and aromatic taste that makes yuzu so unique.
This yuzu powder comes from rapid spray dehydration of the yuzu juice. Seven and a half liters of yuzu juice are needed to make 1 kg of yuzu powder. The yuzu juice used is coming from the Kochi prefecture.
Dextrine is added to the powder to prevent any oxidation or deterioration.
It is strong in the mouth with a perfectly balanced acidity an no bitterness giving you a perfect yuzu freshness and flavor.
You'll use it to flavor ganaches, bavarois and mousses, chantilly cream, cakes and tarts, sauces, fish, marinades.
