Togarashi shichimi - 7 spice mix
Shichimi tōgarashi (七味唐辛子) literally means “seven-flavour chili pepper” and has been a beloved seasoning in Japan for over 400 years.
The blend typically combines red chili pepper with ingredients such as sanshō (Japanese pepper), black and white sesame seeds, dried seaweed (nori or aonori), ginger, and orange or yuzu peel.
The exact composition varies by region and producer — for example, blends from Kanto tend to be spicier, while those from Kansai are often milder and more aromatic.
Flavour profile
This mix opens with an immediate hit of chili heat, followed by warm, nutty notes from the sesame seeds and a light citrus freshness from the dried peel. The seaweed adds a subtle ocean-like umami, while the sanshō provides a gentle tingling pepper note. The result is a harmonious balance of heat, complexity, and umami — perfect as a finishing seasoning.
Usage
- Sprinkle over hot noodles, ramen, or udon for a spicy lift.
- Add a pinch to rice dishes or donburi to enhance flavour.
- Use as a rub for grilled meat, chicken, or fish to deepen the taste.
- Mix into fries, popcorn, or vegetable snacks for a surprising spicy twist.
- Add to soups or sauces as a flavour enhancer — even pastry chefs use it as an unconventional accent.
Storage
Store the spice mix in a cool, dry place away from direct sunlight. After opening, close the packaging tightly to preserve aroma and heat. Avoid exposure to moisture or warmth to prevent clumping or loss of flavour.
