Light sake - drink warm

A soft, light and relaxed (yanwari) low in alcohol (12%) sake from the English main brewer who usually makes somewhat firmer sake. This Slow brew yamahai, brewed with natural yeast, has a slightly dry taste. Preferably drink this sake warm.

Brewery

Kinoshita Shuzō is a small-scale brewery on the Japanese Seacoast of Kyoto Prefecture, founded in 1842. This brewery became known for bringing in Englishman Philip Harper, who thus became the first foreign master brewer (tōji). Head brewer Harper implemented traditional brewing methods, such as the slow brew methods yamahai and kimoto, and using natural yeast. His full-body full-flavored sake is also notable for its relatively high alcohol percentage, the 'complete fermentation' variant even achieves the highest level of 21-22%.
