Monaka Shell Chrysanthemum
Monaka is a type of Wagashi ("Japanese sweets") existing of Azuki sweet bean paste filling in between two shells made from mochi (rice). With these beautiful shells you can make your own Monaka at home.
The shells are made of rice (flour) and then roasted. It give the shells a little roasted flavour.
Fill them the traditional way with Azuki bean paste, or experiment with custard, jam or ice cream! Due to their presentation qualities, besides sweet dishes, more chefs now a days are experimenting with other savory dishes as well.
To make the shells extra crispy, put them in a warm oven for 30 seconds at ~200°C. This is especially recommended for bulk packaging, as the shells become less crispy after some time after opening.
