This original Japanese Diatomite Konro Grill is a traditional charcoal grill made from diatomaceous earth, a highly porous and heat-resistant sedimentary rock that is perfect for evenly distributing heat and cooking food to perfection.
The Konro grill is often used outdoors in Japan. While, it can also be used indoors professionally with properly ventilated and and heat resistant surface, we don't recommend this at home!
When using a Konro grill, it is important to use high-quality binchotan charcoal, which burns hotter and longer than regular charcoal. The charcoal should be arranged in a single layer and lit with a torch or preheated in a charcoal chimney. Once the charcoal is glowing red, you can begin grilling your food, taking care not to overcrowd the grill.
Use the vents to adjust heat. Open vents means more oxygen gets to the coals, which in turn means higher temperature. binchotan lasts a long long time, but if you do need to add some, only add enough to keep the bottom of the Konro covered.
When finish, take the binchotan out in a extinguishing pot or a bukket with water. Do not pour water on the konro grill to put out the fire, or the grill will break due to extreme temperature change. Only put away or store your konro grill after it has cooled completely.
