This pasta is usually made from red <strong>azuki\/adzuki beans<\/strong>, sugar and a small amount of salt. Azuki beans are also among the most commonly used legumes in Japanese cuisine.<\/span><\/p>\n<p data-start=\"320\" data-end=\"654\"><span style=\"color: #000000;\">For the sweet red bean paste, the beans are cooked and then processed in various ways:<\/span><\/p>\n<p data-start=\"762\" data-end=\"838\"><span style=\"color: #000000;\"><strong data-start=\"762\" data-end=\"776\">1. Tsubuan (also in our range)<\/strong>: the beans remain whole or are partially ground.<\/span><\/p>\n<p data-start=\"842\" data-end=\"917\"><span style=\"color: #000000;\"><strong data-start=\"842\" data-end=\"853\">2. Koshian (this variant)<\/strong>: the beans are completely pureed (and sifted from the husks) into a smooth paste.<\/span><\/p>\n<p data-start=\"919\" data-end=\"1051\"><span style=\"color: #000000;\">This smooth red bean paste is fantastic for an awful lot of uses in the kitchen. It has a silky smooth texture that melts in the mouth. Delicately sweet with the layered flavor of azuki beans.\u00a0<\/span><\/p>\n<h2 data-start=\"1053\" data-end=\"1088\"><span style=\"color: #000000;\"><strong><span style=\"color: #3b5249;\">Application<\/span><\/strong><\/span><\/h2>\n<p data-start=\"1090\" data-end=\"1244\"><span style=\"color: #000000;\">Red bean paste in Japan is often bought ready-made in stores (as is our paste) but is also made at home from whole azuki beans, especially for special occasions, such as:<\/span><\/p>\n<ul>\n<li data-start=\"1090\" data-end=\"1244\"><span style=\"color: #000000;\"><em><strong>Sakura mochi<\/strong><\/em>: pink-colored balls of sticky rice (with sugar, half crushed) filled with red bean paste and coated with edible pickled cherry leaves (sakura).<\/span><\/li>\n<li data-start=\"1090\" data-end=\"1244\"><span style=\"color: #000000;\"><strong data-start=\"1276\" data-end=\"1285\"><em>Ohagi<\/em><\/strong>: balls of sticky rice covered with sweet red bean paste. Traditionally made during the autumn equinox. <\/span><\/li>\n<li data-start=\"1090\" data-end=\"1244\"><span style=\"color: #000000;\"><strong data-start=\"1425\" data-end=\"1435\"><em>Zenzai<\/em><\/strong>: a traditional sweet red bean soup eaten mainly in winter. The soup is usually served with <strong>toasted pieces of mochi<\/strong>. Zenzai can be prepared in several ways: <strong>chunky,<\/strong> with coarse pieces of bean or smooth and <strong>mashed<\/strong>, known as <strong><em>oshiruko<\/em><\/strong>. There are also numerous variations: thicker or thinner, sweeter or less sweet, with mochi balls, different spices or citrus zest. The soup can be eaten hot or cold, but heated is particularly suitable for cold winter days.<\/span><\/li>\n<\/ul>\n<p data-start=\"2132\" data-end=\"2340\"><span style=\"color: #000000;\">The smooth, pureed version of <em>zenzai<\/em> <em>(<\/em><strong><em>oshiruko<\/em><\/strong><em>)<\/em> you can easily make with our pre-made, smooth red bean paste. The package has a picture and a small basic recipe, which is written out below (4 to 5 servings):<\/span><\/p>\n<p data-start=\"2547\" data-end=\"2654\"><span style=\"color: #000000;\">1. Put 300 grams of the<strong> red bean paste<\/strong> and 300 ml <strong>water<\/strong> in a saucepan. Mix well and heat while stirring so it does not burn.<\/span><\/p>\n<p data-start=\"2658\" data-end=\"2678\"><span style=\"color: #000000;\">2. Add a pinch of <strong>salt<\/strong> toe.<\/span><\/p>\n<p data-start=\"2682\" data-end=\"2724\"><span style=\"color: #000000;\">3. Add any <strong>toasted mochi<\/strong> Add pieces (or chestnuts).<\/span><\/p>\n<p data-start=\"2682\" data-end=\"2724\"><span style=\"color: #000000;\">4. Add more<strong> sugar<\/strong> Add and adjust the sweetness to your taste.<\/span><\/p>\n<p data-start=\"2824\" data-end=\"3212\"><span style=\"color: #000000;\">Although you can make this dish as sweet as you like, it is <strong data-start=\"2886\" data-end=\"2904\">\u201cnot too sweet\u201d<\/strong> in Japan (and many other Asian countries) one of the greatest compliments of desserts. A confectionery or dessert may be sweet, but preferably not so sweet that it overpowers the subtle flavor of the main ingredients.
