This brewery became famous is bringing in Englishman Philip Harper, who thus became the first foreign master brewer (t\u014dji). Head brewer Harper implemented traditional brewing methods, such as slow-brew methods yamahai and kimoto, and the use of natural yeast. His full-body full-flavor sake is also notable for its relatively high alcohol content; the \u2018complete fermentation\u2019 variety even reaches the highest level of 21-22%.<\/span><\/p>","protected":false},"excerpt":{"rendered":"<p><span style=\"color: #000000;\">A smooth (yanwari), light and relaxed Junmai sake.
