In\u00a0<em>Homakase<\/em>\u00a0we are not talking about the chef of a Japanese restaurant, but omakase at home, home made in other words.<\/span><\/p>\n<p><span style=\"color: #000000;\">Photographer Oof Verschuren (known for his photography for Yvette van Boven's books) has specialized in sushi preparation in recent years. Step by step, picture by picture, he shows you how to professionally prepare real sushi for six guests at your table. All lesser known ingredients or necessary kitchen utensils are discussed, including where they are available and, if necessary, in what season. This is also the idea behind Japanese cuisine: cook locally and seasonally.<\/span><\/p>\n<p><span style=\"color: #000000;\">The result is a brilliant and extremely useful book that any beginner or somewhat advanced home cook can get by with.<\/span><\/p>\n<p><span style=\"color: #000000;\">\u2018Me and Oof share a common trajectory towards omakase; I taught myself this craft from the dorms, while he did the same from his home. I feel that our angle is something quite paradoxical, using a general home kitchen to explore a cuisine that is extremely specific to a time and place that is as foreign as it gets.
