Wagyu A5 Striploin 250 gram
The striploin, also known as the loin or the sirloin, is a cut of beef that comes from the part of the cow called the "short loin". It is one of the most beautiful cuts of beef.
Normally these pieces have a thick fat edge. Our pieces are neatly portioned in Japan and frozen immediately. This makes the meat extremely fresh and you have more meat left over.
How much wagyu do you need?
Wagyu is an amazing sensation that you should enjoy. The high fat content makes it a powerful piece of meat. 250 grams is enough for 4 to 5 people.
Origin of wagyu
The cattle are 100% pureblood Wagyu and are raised in the warm climate and beautiful environment of the Kagoshima region, located on the southwestern tip of Kyushu Island, the southernmost of the four main islands in Japan. The cattle are bred according to age-old Japanese traditions and fed for 840 days, resulting in a high A5 quality with a BMS of up to 12.
How do you prepare wagyu?
Thaw the meat a day in advance (or an hour in cold water) and remove it from the refrigerator 2 hours in advance to come to room temperature
Heat the pan thoroughly without oil or butter, wagyu has sufficient fat of its own.
Wagyu is the treat as natural as possible with a little bit of salt halfway through baking.
Fry the steak on both sides until the correct core temperature is reached:
- Rare 50-52C: 2 min. per side
Medium rare 53-55C: 2.5 minutes per side
Medium 56-58C: 3 min. per side
Let the steak rest in aluminum foil for 5 minutes.
